I enjoyed baking when I was in school and just over a year ago, decided to bake some cookies for the office. However, I enjoyed it so much that it evolved into a weekly event and the office now looks forward to homemade treats every Monday!

Chocolate Chip Shortbread Cookies!
These delicious chocolate chip shortbread cookies were really easy to bake although the dough did require an hour in the fridge to chill before it can be sliced and baked. The dough is made out of plain flour, butter, chocolate chips, brown sugar, vanilla extract and 1 tbsp of cornflour! The dough is then gathered and rolled into a log before being wrapped in clingfilm and chilled.
Slicing was a challenge as the chocolate chips were too densely packed in the middle which means the dough is too thin to stay together. Hence, a lesson learnt is to make sure the chips are well distributed and to make sure the log is evenly shaped as one can see, I ended up with cookies that vary in size and number of chocolate chips!
However, they did turned out really well so definitely something to repeat!
