Although I am no longer working, I thought I will bake something for the Office as we have overseas team members in town.
I have been looking for an opportunity to use these adorable jelly animals so cupcakes seem like a good idea.
These chocolate midnight cupcakes are baked out of plain flour, eggs, sugar, vanilla extract, baking powder, bicarbonate of soda, butter, cocoa powder and water. I split the batter into two, left one half plain and mixed in white chocolate chips into the other half. The frosting is mixed out of cocoa powder, icing sugar, butter and vanilla extract. Each cupcake is then topped with a jelly animal.
The Husband said 'they were ok' but I will need to check on Monday if there are any left!
